You can turn any badge on or off in the Badges menu, though with two different people playing, each one will have to flip all theirs on or off before each game. The exception are badges like the different characters and a few others - all of which are described at the bottom with "* Only takes effect when you start a new game". Those ones will remain active for the entire game they're in, if the game is started with them on. So just switch that badge off before you start a new game and it will remain off for your entire game, through any loads or saves, no matter how the badges are set (the frog actually is the one exception to this - if you get turned into one by the witch, you become and remain a frog for the remainder of that game). You can certainly win as any character (though it's pretty hard as a frog!). The only problem was in the old version of the demo where you weren't even supposed to be able to become a frog!
I hope that explains everything.
(the saves and such don't uninstall because the uninstaller can by default only remove what the installer put in... I probably should have shipped it with empty saves, but most games don't delete the saves, for safety purposes - it would be sad to lose them if you found you wanted them later! Personally I much prefer a clean and total uninstall, so I probably should've done it differently!)
